I would go for Ultra Sun, but that's just a personal preference.
Gen7 does have it's flaws and the start of the game is quite slow, but overall i really like the alola region and some of the things it introduced.
Play US and then Sword + DLC after. You can get most of the USUM legendaries/ultra beasts in Crown Tundra and IMO Sword with the DLC's is the more complete package. It's a case of saving the best for last. Some will disagree but that's fine.

Ultra Sun is a very fun Nuzlocke. Make absolutely sure you prepare for Necrozma
