So...talk to her more about it? Ask her how long they've been separated, if she is still living with her partner, and if she plans to get divorced. You don't have to keep talking to this woman if you already believe there are red flags.

I can say from someone that’s been married twice and separated twice my rings were the first thing to be removed. My husband I just left still had his on for a good few months after though so maybe she hasn’t yet wrapped her head round it and has not accepted it? It all does sound odd though, sorry :-(
