The Heritage Park Railroad Museum in Wakefield has a large working HO scale display of Wakefield circa 1909, back when trains were the best way to travel in the region. Not a lot of train action, but the Lego exhibit in Manchester is kinda in the same vein. https://www.youtube.com/watch?v=JZngXaHIrOM

Downtown Laconia at the antique center. He runs them at 11am saturdays.

2nd this rec'! The whole store is a treasure trove & fun to walk around. The train bit is up on the 2nd floor. (We go every October & spend hours in the place.) I suggest afterward going over to the old fashion ice cream counter on the 1st floor for a malt.

Not quite in New Hampshire, but Charles Ro in Malden MA has a beautiful extensive layout on their second floor. Maybe call first to make sure it’s open.

LaValleys in West Leb has one on the top floor of the store. Not that big but it's still cool.
