Idk. To me I like the idea of just a normal dude doing things in a fantasy world. Thats why I always go human. Seems more impressive than being a fantasy race in a fantasy world.
Sometimes games will make different races have different pros and cons and humans are the normal race. I’m the type of guy who might change everything halfway through a play through, so I just can’t lock myself into a certain race.
Half-elf noble: You can use magic but only when it's 3 o'clock, and only fire magic. You sword stops working when you're using magic. Also you'll need to juggle between these three stats to optimize your DPS, or else you're fucked.
Human: Eh, slap on some stamina and HP and you're good to go.
That's why I always play heavy armor with a 2h weapon in RPGs. "Oh no I've been leveling my fire magic but this drake is immune to fire attacks! I'm completely crippled in this fight!"
I just hit things with a big hammer and it usually works. And for everything else there's molotov cocktails.

I've run that build in D:OS, Skyrim (with a fire spell), Borderlands 1&2 (sniper rifle and fire grenade), Remnant, and grim dawn.
A hard hitting weapon and an AoE fire attack are all I want in a game.

Humans do usually have their own pro as well, often with no cons, while other races have something like two pros (or an amazing pro) and a con. Really just depends on your play style though, and humans can usually do a bit of everything, so it’s great for new players.

Tbh, I deeply dislike that humans are, in 90% of the time, the "default" races in game, without many advantages or disadvantages.
Why humans are the most boring race? Let them be the strongest one, or weakest, or whatever
Because in fiction writers often use other races to amplify or exaggerate human cultures/traits so humans are the baseline.
They're boring because they're normal to us, so of course they're going to be the white bread of races. It'd be kinda lame to play a fantasy game where the meta is just being a regular human.
To make up for that they're usually the most well rounded and adaptable race where you can change up your play style any time you want. That's also why they don't have any major advantages or disadvantages that may push them towards a specific role. It makes them great for new players that don't know how or don't know what to specialize in.
Going by how we compare to most animals, it wouldn't be out of place for humans to be either the super-adaptable omnivores, or the guys with extreme stamina who can just keep running (and maybe fighting) all day. Or the guys who are really amazing at throwing stuff with both precision and force. We have plenty going for us besides our brains, really.
I feel like even in these fantasy settings, humans would probably have a lot of race-related benefits. But we don't think about them because we're human and don't know what it's like to be like a lizard person or something.
Like, cat / lizard / whatever people probably don't have the ability to sweat, since their animal counterparts don't, for the most part. So maybe humans should have increased stamina regeneration or something.
Either that, or just make race purely cosmetic. I want to be able to be a lizard wizard without like missing out on intelligence buffs or something just because the developers decided lizards are dumber than everyone else.

I actually wanted to ask why people play humans. Don't get me wrong I ain't criticising anyone I'm just curious. Because every time I create a character I'm like, I can be an elf, an orc, etc..., why would I stick with human? But your answer makes sense so yeah, interesting perspective.
Sometimes it's fun role playing as a human in a fantasy world. Like a heroes journey where you start out incredibly average but eventually become unstoppable.
It's difference in perspective/priority. You seem to give importance to what the character can do (from birth), not who they are. For those who focus on the latter, the race is just another descriptor that might suit or not the kind of character they want to role play. Think like this: Hector didn't need Achilles' invulnerability to distinguish himself as great character that echoed through human history.
Then there's me trying to stick to some semblance of role play for my character, giving up halfway through, then going straight 2 hand brawler -_-

He's not so much a melee sword shield character in all games like in mhw grant uses a hunting horn, in Skyrim/oblivion it's a sword and shield in fallout games it's a semiautomatic rife. Grant changes throughout the times. He more or less follows the basic warrior/fighter class in all things

Grant had lived through many hardships in all his lives. Known by many different people of different universes. At first, he thought that his undying soul that keeps reincarnating in different universes was a blessing. After dozens of time doing so, he realises that he’ll always lose his loved ones, not being able to see them again, with his hard work in the life that he has to leave behind. He eventually grew insane, and starts killing himself as soon as possible when given a new body. There were universes that had magic and unexplainable powers. It was the year 1989 in that world. No magic. Just a lot more peaceful than Fallout, which was one of the worlds he was in. It was a normal life. With his family, and went to school normally. Sometimes later he played games for his own enjoyment, playing RPG games and making himself a white man with the name “Grant”. By 2019, he became a redditor and started gaining weight, how unfortunate. He then gave up all his time for League of Legends.....

I've honestly fantasized about a gaming universe where you design a character and that's the character you play all your games with. Like your clothes and visual appearance is all affected by the other games you've played. The coolest thing I think would be a battleground where you can bring gear from any game you've played and just duke it out against other players and their gear from other games. Like you have an elite dangerous ship bombing a fortification while a WW2 anti air team tries to take it out before getting overrun by a cavalry charge except except the horses are skateboards. Obviously this could only work with games on the same engine and would take an immense amount of work but I think something like Unreal engine would have the community and versatility to support this madness

I like the elf archer route. There's something hilarious to me about shooting a wizard in the head with an arrow or stabbing them with a dagger.
To think they posses all this arcane knowledge, can summon terrifying creatures from the unknown and yet get snuffed out by a bit of steel and wood is really fucking funny to me.
Fucking idiots should have invested in some armor and not overpriced pajamas.
My favorite play style was just being an absolute barbarian with one or even two swords. I would just run up on wizards and beat them to death while they shook their hands at me while trying to back away. Hokey religions and ancient magic are no match for a good sword at your side.

I always choose human if I can because they tend to be the most well rounded and don't have any perks that let you just completely cheese an entire area.
Yeah, “human” is, like, the blankest slate. Every other race has some specific lore attached to it. Humans are mostly just either very varied or very basic, both fitting my characters.
