Yeah, looks like if you use a fork that cheese is falling off the noodle. Happens when you use the wrong cheese then reheat it in the microwave, making a Mac and cheese roux is so easy... I will never understand how these places serve something bad that is so easy to make good.

IDK the quality or flavor of this mac and cheese (which looks questionable), but some people/places (including in our home) intentionally make baked mac & cheese without a roux - usually with cubed cheese instead of shredded. Done right you can end up with crispy cheese clusters of noodles that is kind of like "all edges" of a creamier recipe. For us, it's just a different style.

I've have BBQ that looked similar and better and it was all shit. Brisket was flavorless, dry as shit Mac, dry chicken, and ribs that is cakes in sauce and not done right. Ribs need to have a nice layer of sticky kind of caramelized BBQ sauce and not like someone dumped a bottle on the ribs AFTER they're done. I hope the meat was good but if I got that sad Mac I would ask for a different side. I would fear their potato salad would be dry too somehow. Seems like no restaurant knows how to make a good smooth and cheesy mac. Home made is always superior.

Hmmm gotcha. Is there anything diff that makes them as they are though? Like 5% of places I go have these and they’re distinctly better to me. Given the length it has to be a large sized potato like Idaho I assume. But I imagine the oil or method is what makes them amazing. For reference, 5 guys fries are the same as what I’m mentioning and seeing here. And they use peanut oil which I think is the secret sauce I’m looking for

Russet potato. Oil type varies, canola is typically most common, next to vegetable. And really, blanching is the real secret for most good fresh cut fries. Because once they're blanched they don't need to be in the fryer after for very long at all.

Love it, thank you!!! I’m partial to the peanut oil after five guys, who replicated this style identically for me. Never tried canola though and will do that for sure. Super intriguing on the lower fry necessity. Def affords that more real potato flavor and less crunchy oil soaked skin flavor you see everywhere else. I can see how it feels glorious to smoke a good piece of beef that melts in your mouth. I don't fault people for that :). It is just a bit of a shame this sub is almost entirely about showing off briskets. 😅 I smoked chicken liver with a spicy rub. It tastes soooo good. Best way for me to eat liver so far. Just have to find right point between crispy-like outside while keeping it juicy enough inside. Also smoked sea bream which is fantastic. Simply smoked and sprinkled with seasalt on the plate. Never had fish done so well. Yum.
