That should be more than high enough to face it, but if you're struggling, leveling up more is always an option. What are your stats? What's your weapon plus weapon level?

26 strength, 25 intelligence, 18 mind and endurance, 15 vigor. I use a katana+5 and meteorite staff with rock sling, glintstone pebble and carian greatsword

Vigor's too low. You're going to be dying far too easily to the red wolf and other enemies if you don't invest in vigor soon. What's the point of 26 strength with your current build? Do you have an affinity on the katana?

Quite clearly! But nothing wrong with it. The fact is, the uchigatana is a dex-scaling weapon. Your main stats are strength and intelligence, so you're not getting much out of your stats with it at the moment. Might be good to apply an ash of war that allows for a magic affinity if you have it, to give it some int scaling. Or just focus on your spells for the moment. You do want to pump that vigor, though. More HP will make the game a lot easier.

Samurai is a dex class character. You’re levelling up everything except dex and vig.

When you are levelling up check the damage of the weapon to see how much increments you are getting. It applies to all stats. If you don’t see any reasonable change then try to learn about it before investing.

You can put a heavy ash of war on that katana and it will make it scale off of strength.

Next boss after the wolf. I’d recommend summoning for the wolf and hope you get somebody who can pull your through. Then put any level ups you get between the wolf and Rennala into vigor. Get through her (summons, spirits ashes, cheese, whatever it takes …) and you’ll be able to respec and fix your mistakes. I’d recommend focussing on vitality and ONE attack stat, plus enough mind for a spirit ash you like.

Usually people fight him at 35 - 40. You must be doing something wrong. Do you meet the stat requirements for the weapon you're using?

Here's a small tip that I use against him....sometimes he will bite fast and then rear up and do a lunging bite right after...if you watch for it and dodge roll he's open for a few hits. Other than that I would just evade evade evade and don't engage him unless he goes for that bite.....just my 2 cents

I've literally never see him do that how do you get him to. Only ever see him using a dash bite or a super quick double bite followed up with immediate sword combo. I've tried 8 times and haven't found a single opportunity to get more than one hit in and even that one hit I usually take dmg in process as he never stops attacking for more than half a second.

Just stay on him and keep hitting it's ass. Very weak to physical attack. Use Skeleton or GreatShield bro ashes to keep it occupied while you keep whaling.
