Why not? It's an expression, just like any other one, and I don't have to believe in God to use it. Your question is like asking someone why they'd say "Shit!" if they don't currently need to use the restroom or a virgin why they exclaim "Fuck!". In short, it's a stupid line of logic.

It’s just a verbal expression of mild shock. It always cracks me up when christians get pissy about this. I can say “Fucking hell!” instead but I guess that’d still be offensive…?

It's an expression that I picked up during my formative years and normally, I'm not even thinking when I say it. It's sort of like when people talk about the Sun coming up as if the Sun goes around the Earth. We know that it doesn't, quite the opposite in fact, but the turn of phrase still exists. Also, sometimes, it feels really good in a moment of stress just to say "oh, my fucking god." Or "Jesus Tap-Dancing Christ."
