Same reason we say "Bless you" when someone sneezes. It's just a common expression that's lost its original meaning.
Language isn't limited by belief
Why not? It's an expression, just like any other one, and I don't have to believe in God to use it.
Your question is like asking someone why they'd say "Shit!" if they don't currently need to use the restroom or a virgin why they exclaim "Fuck!".

It gets my co-workers all riled up. I regularly blaspheme. I can’t use profanity at work, so this is close enough.

its a figure of speech, why do atheists celebrate christmas, why do atheists say god bless you after a sneeze.
Culturally acquired habits that is by all means atheist by essence. Like why Christian moved Jesus birthday to 25 December to get it to match old traditions
I also say "the whore mother of god" or "god fuck it" a lot.
"Jesus Fucking Cunt" gets thrown around a lot on my drive to work

A common expression that is part of American English. It has zero meaning, its just an exclamation.
Because it's just a simple colloquialism.
You can go to mass or sit for Passover and not have a belief. I don't want your head to explode in more advanced concepts.

Because it's an expression
It's an expression that I picked up during my formative years and normally, I'm not even thinking when I say it. It's sort of like when people talk about the Sun coming up as if the Sun goes around the Earth. We know that it doesn't, quite the opposite in fact, but the turn of phrase still exists. Also, sometimes, it feels really good in a moment of stress just to say "oh, my fucking god." Or "Jesus Tap-Dancing Christ."
