I boil the potatoes, then add butter, sour cream, cheese, and dry Ranch seasoning. You don't have to mash them, just stir. If heaven has a flavor, that's the recipe. Yes, I'm bragging.
Home fries in a skillet. With onions, halved cherry tomatoes, and diced chorizo sausage.

I love boiled new potatoes with a dill butter sauce.
Potato pave, essentially a better au gratin. Thinly sliced, soaked in heavy cream, layered in a pan with butter, baked and compressed, cooled cut into cubes, then seared in a pan and basted with butter, garlic, and herbs. Labor intensive for potatoes, but crispiness, creaminess, and depth of flavor cannot be beat.
I like to use a lot of butter, then shove them up my tush.

Mashed with mushrooms and green bell-peppers and a small sample of cayenne pepper. Sounds horrible, but trust me you’ll fall in love!
Quartered baby golds, tossed in olive oil then seasoned with kosher salt, black pepper, parsley, oregano, thyme, basil, marjoram, rosemary, savory, and sage (Italian seasoning + parsley). Roasted until browned. This is my go to side for salmon and steaks
Boiled in water, take them out, tear off the skin, and apply cream cheese. Yum!
