Why don't those workers band together and start their own Amazon? They know how to do it. They could have a worker-owned enterprise and hire away any workers that Amazon hires.

Hardly. If they owned their own Amazon, they would share the profits equally. It would be better run, it would have happier, better-paid employees, and it would put Bezos out of business. Right?

It isn't, so long as said union and its contracts are voluntarily entered. Such systems existed - I believe the Colored Screwman Benevolent Association of Galveston, a black union in the late 1800's in Texas, outcompeted a rival union for jobs. All without the hand of the state.
